市面上主打腸道大掃除、魔力瘦身、改善體質的酵素產品，真的有效嗎？
馬偕營養師趙強針對酵素指出，立即讓你排便的效果，通常跟用來製作酵素的原料本身或其中添加的成分有關，「絕對不是因為酵素。」
一探這些標榜「體內環保」或號稱「便秘剋星」的產品會發現，其實裡面都有常見的決明子、仙楂等用來促進排便的原料。另外則是像膳食纖維或一些像是乳糖、麥芽寡糖、果寡糖等醣類。
國泰醫院腸胃科醫師洪志聖解釋，因為小腸較難吸收這些醣類，到了大腸後，就成為腸內細菌的養分，腸道菌大量繁殖後產生的酸性物質就刺激了腸道蠕動，發揮清掃腸道的功能。「就像有人有乳糖不耐症，喝牛乳就會拉肚子一樣，」洪志聖說。此外，內含的膳食纖維也能增加糞便體積，促進腸子蠕動。
雖然酵素食品內的添加物讓人「無便一身輕」，但專家指出，想要因此減肥的人，恐怕要失望，因為酵素產品的功能主要是幫助消化。
台大生化科技系教授黃青真就說，所謂的脂肪、澱粉或蛋白質分解酵素都是消化酵素的一種，能分解脂肪、澱粉等，讓食物中的營養容易被身體消化吸收。
「結果就是，讓你更快地吸收營養。」黃青真舉了某種減肥藥為例，它的原理就是在抑制我們體內的「脂肪分解酵素」，使身體無法分解脂肪讓小腸吸收，最後就排出一大堆油。
黃青真笑著說，現代人肥胖常是因為吃得太豐盛，所以總是想盡辦法來阻止身體吸收營養，從這個角度來看，不想改善飲食習慣，又想用消化酵素來減肥，是不可能的。
若要問補充食物酵素可能有的好處，大概就是幫助消化。陽明大學生化所教授蔡英傑就說，現代人吃的太多、太油，生活壓力又大，消化能力都不好。無法消化的結果就是，食物到了大腸後，壞菌就要開始進行腐敗作用，又釋放出毒素，尤其是高油脂、高動物性蛋白質的食物。
結論是，不管想減肥還是腸道保健，根本之道還是從一開始就控制食量，並多吃新鮮蔬果、全榖類、豆類，還可以攝取其中的膳食纖維，既能夠增加飽足感，也能刺激腸道蠕動，幫助排便。
至於酵素食品能否取代益生菌？台北醫學大學保健營養學系教授黃士懿解釋，只有當裡面用來發酵的菌類確定是屬於腸道菌的一種，才能達到喝乳酸菌飲料的部分功效。黃士懿說，酵素「就像綜合蔬果發酵液」，這種酵素液的製作原理是利用一些菌類讓五榖、蔬果等各種原料發酵、濃縮成一瓶汁液。但他提醒，市面上這類產品多標示不明，是否有這些菌類，含量又是多少，都很難確定。
相較之下，專家們建議直接喝含有益生菌的產品可能來得實際一點。
從衛生署健康食品認證網站查詢發現，目前市面上的酵素食品，沒有任何一件取得健康食品的認證。也就是說，它們的功效究竟如何，並沒有任何人能保證。
台北醫學大學保健營養學系教授黃士懿說，目前真的很難只從成分標示來分辨市面上酵素產品的品質優劣，如果有業者不斷強調療效甚至宣稱能取代藥物，民眾千萬不要相信。
