有醫師指出，保健食品也不見得保險，有民眾疑似長期服用保健食品，後來肝炎發作死亡。由於台灣民眾吃補不亞於吃藥，衛生署將展開食物和藥品交互作用的研究。
基隆長庚醫院肝膽腸胃科主任簡榮南今天在B肝藥物相關記者會表示，多年前收治1名病患，患者死前檢出藥物性肝炎反應，可是發病前並未服藥，只有長年服用5種保健食品，令人懷疑就是這樣把肝給吃壞。
簡榮南說，雖然未能直接找出傷肝的食品，可是有許多證據顯示，食品與藥物的交互作用會產生肝毒性的危害，如果病人體質特殊，就可能因此吃出急性肝炎或猛爆性肝炎，民眾若覺得有必要吃保健食品，還是少量、低劑量為宜。
衛生署食品藥物管理局長康照洲受訪時說，某些食物本身就可能有肝毒素，例如近年很熱門的降血脂保健食品紅麴，在發酵的衛生條件不佳下，就可能產生橘黴素，橘黴素超過食品中真菌毒素限量標準，就有肝毒性之虞。
此外，康照洲說，葡萄柚會影響某些藥物的代謝，正在口服抗黴菌藥物治療香港腳的人，就要避免服用葡萄柚及其製品，以免香港腳藥物在肝臟內的濃度升高，造成肝功能損害。
康照洲說，國外對金絲桃（又譯聖約翰草）、銀杏葉等保健食品的研究顯示，金絲桃會降低某些心臟病藥物在體內的有效濃度，銀杏葉則會使華法林等抗凝血劑的濃度過高。
肝病是國病，洗腎則有新國病之稱，顧腎養肝的食品廣告一大堆，衛生署查獲不少宣稱療效的食品違規摻西藥。康照洲說，衛生署將針對國內常見保健食品的肝腎毒性及其與常用藥品的交互作用，進行研究，以利把關食品安全。
